New Zealand Thyme Honey comes from a single species of thyme that grows wild in the remote and rugged Central Otago Mountains of New Zealand’s South Island. This thyme was broght to New Zealand by the Chinese miners during the gold rush of the 1800s. In this day rugged enviroment thyme has thrived and is considered to bethe only naturlized area of thyme outside Europe. During Springtime the side of the mountains are a mass of purple with thyme flowers, and the air is filled with an amazing fragrance. This is when our unique honey is produced by our bees.

TASTE:
Light acidity and not overly sweet.

FLAVOUR/AROMA:
Simple huge! Pungently, herbish. Definitly an acquired taste but once acquired... wow! In the same way that pungent cheeses (despite the aroma), have an amazing palate clarity, so does our Thyme Honey.

BEST USE:
Perfect with cheese scones and can help make some incredible meat jus’s.

New Zealand Honeyco Manuka Honey comes from the flowers of our native Manuka tree. This is a scrubby tree found right across New Zealand.

COLOUR:
Smooth yet firm and fudge-like, in a tawny tan colouring.

FLAVOUR/AROMA:
Strong tannic flavour that dominates the sweetness with a unique orange peel /oak aroma.

BEST USE:
Great as a spread on nutty grain breads and adds rich complexity to savoury sauces and marinades. For a sensational taste, spread over the topside flesh of your salmon before smoking.

Beech Forest Honeydew Honey: Nature’s aid for digestive health and well being 

SOURCE
Unlike our other honeys, whose source comes from the nectar of flowers, this honey is sourced from the sap produced by a small scale insect that feeds off the beech trees. The sap trickles down the outside of the tree and is collected by our bees during early winter and spring, when there is no or little other floral sources for the bees to forage, resulting in a very pure honey with very special properties and flavour. New Zealand Honeyco Beech Forest Honeydew comes from the untouched, ancient beech forests that stretch along the base of the Southern Alps, in the South Island of New Zealand. There is no other activity here other than beekeeping, resulting in a honey as pure and natural as you will ever find.

Fine, silky smooth liquid in a deep gold-chestnut red colouring. 

FLAVOUR/AROMA:
Clean and refreshing flavour that is not too sweet, with a spicy orange peel aroma.

Wild Forest Honey: Pure Honey from a Pure Environment

New Zealand Honeyco Wild Forest Honey comes from within the ancient untouched rainforests of our National and World Heritage Parks in the South Island.

These ancient temperate forests have changed little since the time of the dinosaurs and are amongst the most remote and pristine environments to be found in the world. New Zealand’s geological isolation has resulted in the formation of some very unique flora and fauna and our bees are free to forage in this amazing area to bring you a very special and pure Wild Forest Honey.

We have direct involvement with this honey from the hives right through to the consumer, and we take every care to maintain the purity of this unique honey.

COLOUR:
Soft tan in a liquid or a silky cream. Melts easily on the tongue.

FLAVOUR/AROMA:
The natural sugars are superbly offset by complex tannins in the nectar so it doesn't seem sweet. A spritzy  fruity aroma.

BEST USE:
An extremely versatile honey. Amazing on date scones, hot toasted breads or fresh baguette. Excellent drizzled over porridge or breakfast cereal and easily added to your favourite hot drink.

White Clover Honey: One of the purest clovers in the world

SOURCE
New Zealand Honeyco White Clover Honey comes from the southern farming pastures of the South Island. This is the area where the purest and best white clover honey is produced.

HELPING THE ENVIRONMENT & ECONOMY
White clover is a legume and is present in New Zealand farm pastures. The natural nitrogen fixing abilities of this clover significantly reduce the need to add nitrogen fertilisers to our soils, which has a major benefit for the environment. Our bees play a critical role in this, by pollinating the clover to maintain a seed bank in the soil. Without this seed bank the clover would die out. 

It has been estimated that the free pollination the bees perform, while collecting nectar from the white clover, contributes about NZD$2billion to the New Zealand Economy each year. There is also the major environmental benefit of reduced fertiliser use on the land.
